The underground pod legume which is considered as a nut and popularly known as groundnut is unique because of its wide range of uses. It is generally used for cooking and processing of different products. It is rich in oil, protein and has high energy value. Peanut is processed into secondary products that include boiled, roasted, salted and frozen unshelled groundnut; Groundnut milk, yoghurt, and bars; Groundnut butter, cheese, bakery and fermented products; Groundnut sweets, protein films and confectioneries. It is harvested when the crop reaches physiological maturity, this is when 70-80% of the pods are matured.
